Sprouting releases the good stuff and combined with our 12-15 hour sourdough fermentation - we cannot think of a better method to prepare grains for human digestion. This bread is nutty and satisfying - simply delicious and goes with anything. It is so good you can enjoy it with nothing on! It comes ready sliced - easy for travelling and healthy snacking on the move. Although it is hard to stop at just one slice, go easy to start with if you are not used to high fibre foods. It will keep you nice and regular in the most natural way! We also add just the right amount (4%) of linseed to the dough. Linseed soothes the transaction of food through our digestive system and contains valuable Omega 6 fatty acids, 72% of which are polyunsaturated fats which we need to obtain from our diet. Linseed is also a source of lignans, a form of antioxidant. This bread - drizzled with our high-lignan flax oil must be a (health) foodies dream come true. You find it in our 'Healthy Pantry'.     • Keep cool and dry. In very hot & humid weather bread is best stored in the fridge in the bag. During the summer months, we put 4 days ‘best before’ from production and in winter 5 days ‘best before’.

      If you store bread in the bag in the fridge it may keep for quite a few days longer than the ‘best before’ date. Should the bread be left in the sun it may go mouldy ahead of the ‘best before’ date.

      USE

      Can be toasted - but please be aware that toasting at high temperature increases acrylamide. Good to know: The temperature inside bread when it's baking is only about 102°C - even if the oven is set at 180-235°C! Toasters are rated around 1200 KW to produce a browning effect. Russel Hobbs informs us that the temperature inside a toaster reaches 400-420°C! Burnt toast is high in acrylamide, a chemical that is produced when burning starchy foods. EU advice is to take caution when eating burnt food. This bread doesn't burn easily but it is best just toasted lightly.

      MOULD

      If there are any signs of mould - throw the whole pack away as mould spores may be present throughout the bread - not just on the surface where you can see it.
