We don't use any artificial enzymes or potato flour or egg. We just mill the finest biodynamic whole grain rice and organic whole linseed together to prevent oxidation for a fresh linseed (flaxseed) bread containing 1 heaped teaspoon of linseeds per slice. DO NOT TOAST to preserve the delicate oils in the linseed.
This must be the most delicious way of getting your daily dose of healthy linseeds. To preserve the freshness the whole linseed is milled together with the rice - all the valuable oils are absorbed into the rice. The gentle baking process gives this bread a chocolaty nuttyness. Each loaf is an individual work of art - the dark crust forms a Keltic pattern - the hard crust harbours a soft centre speckled by the freshly milled seeds. (Ingrid's favourite! It's like eating a chocolate sandwich as you crack through the hard bit you hit the soft bit) Again the fresh milling is everything - we tried the vaccum packed milled linseed. Despite the protective packaging they tasted rancid. Freshly milled linseed is sweet and nutty. By milling the seed it is much easier absorbed. 2 Slices (about 114g) provide more than 31% magnesium and 15% B1.
