| Although heavy in texture, this bread is moist and chewy and easily assimilated by the body as it is made from 100% sprouted grains. Sprouting 'pre-digests' some of the starches and proteins. Chew it well to enjoy the natural sweetness. No yeast, sugar, salt, not even flour has been added. Biodynamic grains have more vitality than organic grains. Please use a sharp knife and slice it carefully. Flavour and texture will vary. Do not freeze.

Biodynamic - more than organic!
If you want to see the special vitality in biodynamic grains - try the following test: Soak and sprout biodynamic grains on a fruit day and try sprouting organic grains at the same time. Whenever we try this we find that the organic grains sprout to about 60-80% - the biodynamic grains sprout 100%. That is why we don't have to mince up all the grains in the Essene bread - they are all sprouted.

Essene bread - all the right ingredients!
What does it look like?
Glistening whole grains – dark and malty – a bit lighter than the colour of Guinness!
What does it taste like?
Very healthy – a bit like a malt loaf but not so sticky sweet! Sprouting converts starch into sugars - giving the bread a slight sweetness. It’s moist with soft berries for a satisfying chew.
Serving suggestion:
Just slice it and eat with nothing on - simply delicious. For a ‘heaven and earth’ sandwich mix one slice of Essene with a slice of light spelt bread!
Why is it so good for you?
We must congratulate Quantas for their healthy choice – they served our Essene bread on their flights for quite a few years – we guess that nobody arrived constipated from the long flight! Grains store many vitamins, minerals and enzymes. During the sprouting process these are multiplied by the growing plant, which even produces its own lactic acid. This is a wonderful natural process – used by the ancient Essene tribe some 3000 years ago.

Instead of salt we add Seagreens® - the only seaweed licensed for the use in organic and biodynamic food. From the Seagreens® Information Service:

Raw Food
The Essenes baked their flatbread on hot stones in the desert sun. In our climate we have to use the baker’s ‘sun’ – the oven. At ABO we also bake on stone! Bread is the baker’s ‘fruit’ which is ripened at temperatures akin to a nice hot summers day until fully developed, the oven heat is just to finish the ripening process. The inside of the bread never exceeds 97.5°C - a temperature akin to a nice hot sauna.
Many raw foodists eat ABO essene bread as it is 100% sprouted (dehydration would be another way to produce Essene bread but this is extremely energy consuming and not environmentally friendly.
Vitality – this one glows!
Some people can see the energy lighting up the Essene bread! It’s biodynamic – more than organic!
When you sprout whole trays of grains and only 60%-80% actually sprout, the grain will go mouldy. Mould spores in a bakery are bad news. In the 8 years we have been making this Essene bread we have never had any grain go mouldy during the sprouting process. When we tested organic grain we found it did not sprout 100%. This is why we do not mince our sprouted grains. Instead of a sticky mass you receive a proper sliceable loaf which provides you with something to chew on - a pleasant change to processed foods.
